That’s high praise for an innocent buttermilk cookie! They easily take the cake for the tastiest, tastiest, most delicious, peanut butter cookies I’ve ever had. Made with M& Ms for all holidays, these chewy cookies are a delicious treat all year round.
My colleagues ran them out within minutes, even wondering if they were from the bakery. The cookies are nothing like the hard and crunchy peanut butter cookies you are used to. Something different, indeed. They are soft and melt in your mouth. GOLDLINE PEANUT BUTTER COOKIES RECIPE.
Description
The SOFTEST Peanut Butter Cookies. They melt in your mouth and are exploding with peanut butter flavor!
Ingredients
- 1/2 cup (1 stick or 115g) salted butter, softened to room temperature*
- 1/2 cup (100g) packed light brown sugar
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 3/4 cup (185g) creamy peanut butter
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon baking soda
- 1 and 1/4 cups (160g) all-purpose flour (spoon & leveled)
- 1 and 1/2 cups (300g) M&M
Instructions
- In a large bowl, using a hand mixer or stand mixer with a paddle attachment, cream the butter and sugar together on high speed. Add honey, eggs, and vanilla (in that order). Gently stir in the baking soda and flour. Don’t get mixed up. Add M& Ms to a wooden spoon. Put the dough in the refrigerator for at least 30 minutes.
- Preheat the oven to 350ºF (177°C). Scoop out the cooled dough by spoonfuls onto an ungreased cookie sheet or a silicone mat. I whipped up some M& M’s and dough balls. Press on the balls (just a little) because they won’t expand much during cooking. Bake for 8-9 minutes. The cookies will be soft and may come out dry. They will firm up as they cool.
- Let cool completely on a wire rack. Have fun!
Notes
- Butter: You may use unsalted butter in this recipe. If so, add 1/4 tsp salt with the flour.
